the rice hulls help the juicing process.

It's brought to our back ridge and discarded... and the cows just love
it. I have seen them chase the truck to get at it.

at the winery, the punchdowns begin. At this point the wild yeast has
been terminated, and winemaker's yeast has been added for the
fermentation.
Ron is up all night with the punchdowns

November through May, the wine is constantly monitored, tested, red wine
pumped out of the barrels off the lees, and returned to barrel.
